This creamy dish is so quick and easy to make, its like any other pasta dish just made with a healthier twist. To be honest I know this dish would have been amazing if my tastebuds were more compliant lol. Read on to find out why...
Unfortunately I made this during my first trimester of my pregnancy and during that period I went off my favourite things like prawns and any thing remotely healthy. The truth is I wasn’t sure if I liked the edamame spaghetti at the time, husband seemed to, (read all about my pregnancy symptoms here) so if you’re going to try this recipe, please do at your own discretion lol! I’m joking I am sure it’s actually delicious, plus you can always replace the edamame spaghetti with regular wholewheat or gluten free pasta, if you’re not so keen.
I managed to grab my organic edamame pasta from Aldi, but if you know Aldi well, a lot of the best finds are limited edition, however you can grab the same product made by a different brand in Sainsbury’s or from Ocado. This recipe contains dairy (cheese) however for great dairy alternatives you can try these great plant-based cheese products from Oatly or Violife who I have been using recently since trying to cut dairy out of my diet.
Prep Time: 10 mins
Cooking Time: 15 mins
100g (or as many as you like) Organic King Prawns
1 Pack Edamame Spaghetti (or regular pasta)
2 Garlic Cloves (minced)
2 Green Birds Eye Chilli’s (or as many as your lips can take)
1 cup Fresh Cream or Dairy Free Cream
2 tbsp Soft Cheese or Dairy Free Soft Cheese
2 tbsp Parmesan Cheese or Diary Free Parmesan
1tbsp Fish Sauce
Handful of Fresh Baby Spinach
Fresh or Dry Parsley
Pinch of Pink Salt
Pinch of Crushed Black Pepper
What You’ll Need:
2 Sauce Pans/Pots
Start by adding the cream and cheeses into a pan on a low to medium heat.
Season with salt, black pepper to taste, the minced garlic clove and chilli’s.
Cook for 8-10 mins.
In a griddle pan add a few drops of olive oil into the pan and heat. Add prawns, season with fish sauce and grill for 5-8 minutes.
Follow the cooking instructions for the edamame spaghetti. Once cooked keep some of the drained water to one side to loosen pasta incase of over thickness.
Finally in a wok, add the pasta, prawns, spinach, basil, parsley and cream cheese sauce and mix everything together. If you find the mix is too thick, add some of the pasta water you saved earlier and mix in again.
