I don’t know how many prawn recipes I have on here but if you can’t already tell, prawns are absolutely one of my favourite things to eat. I’m sure I’ve said this too before. Smh.
Last night called for a quick and easy meal as I am so heavily pregnant now I still don’t know HOW I manage to get up and cook. Thats what you call a real passion. lol. Anyway this simple recipe is so yum I could eat it everyday, but theres no self respect in that, so once in a while will have to do, even though I am very tempted to make it again for dinner, not to mention I had what was left for lunch today too. I should just stop….

Cooking Time: 15 mins
Serves: 3/4
Ingredients:
1 pack of Pasta, I used Tagliatelle
1 pack of King Prawns or Jumbo King Prawns
4 tbsp Butter
2 tbsp Mascarpone
4 Garlic Cloves, chopped
4 Red & Green Birds Eye Chilli, chopped
1/2 tsp Mixed Dry Herbs
1 tsp Dried Parsley
1/2 tsp Garlic Granules
1/4 tsp Cumin Seed
1/4 tsp Oregano
1 tbsp Fish Sauce
1/2 tsp Seafood Seasoning
Salt and Pepper
Parmesan Cheese
3 tbsp Olive Oil
What you’ll need:
Large Pot
Medium Pot
Small Bowl
Wok
Tongs
Method
In a large pot bring to boil hot water and salt for your pasta.
Season prawns in a small bowl with seafood seasoning, fish sauce, garlic granules, 1/2 tsp dried parsley, cumin and oregano.
Marinate into prawns thoroughly and set aside.
Add butter into a medium pot on a medium to low heat otherwise your butter will burn.
As its melting add chopped garlic, chilli’s , salt and pepper to taste, mixed herbs and 1/2 tsp of dried parsley.
Next add the mascarpone, grate in some parmesan cheese and stir in until completely melted and combined.
Simmer on a low heat for 5 minutes and then set aside.
By now your water should be at boiling point, add your pasta and boil for 10 minutes or as pack instructs.
Next heat up your wok for 3 minutes before adding olive oil. Once hot add your prawns and cook for 6 – 8 minutes or until pink/orange in colour and browned on both sides.
Pasta should almost or be ready, if so drain and save some of the water incase you need to loosen your pasta.
Add pasta to prawns in the wok, along with your garlic butter and using tongs gently toss and mix till all the ingredients are combined. If you find the pasta is too thick or dry, use some of the pasta water to loosen.
Serve and garnish with fresh pepper, parsley and cheese. Enjoy.
