Of recent, I must shamefully admit that I do find myself wasting a lot of fresh food, simply because of impulse purchases and not proper planning of meals, so I end up over buying and having too much, resulting in expired goods. So the last few meals I’ve made, I have made sure I make good usage of the food thats already in the house, you know when you dig deep enough and find half a bag of frozen chicken at the back.
On Monday night I had no idea what to make for dinner, I had some Sea bass (fave fish ever), potatoes and a bag of baby spinach. I could have made a simple mash and I was well within my rights to make sautéed spinach to accompany a steamed bass, but that would be, well… Boring. Instead I opted for a Spanish bake, Sea bass with potatoes and spinach, topped with Grana Padano cheese (a type of parmesan cheese) and boy oh boy did it blow my husbands socks off.
Prep time: 20 mins
Cooking time: 40-45 mins
Serves: 2-4
Ingredients:
2 Whole Sea bass x 2 Garlic Cloves
Small Ginger Root
Handful Fresh Parsley
1 tbsp Dried Herbs
1/2 tsp Cayenne Pepper
1 tsp Black Pepper 5tbsp Olive Oil
Baking potatoes
Cherry Tomatoes
Baby Spinach
Grana Padano Cheese
Method
Start by chopping your garlic cloves and ginger root with the skin on. Add all herbs, spices, with chopped garlic and ginger into a mortar & pestle, then add olive oil and grind together, making a thick textured paste.
Place the whole sea bass onto a grill tray and carefully score the side of the fish with a sharp knife. Repeat again on the other side.
With your hands, or a pastry brush, taking generous amounts, massage the garlic and herb mix onto the skin of the fish and inside. Slice lemon into halves and place into the scores you made in the sides of the fish.
Peel, then slice potatoes and to a pan of water, parboil (halfway cook it) for 10-12 minutes)
Once parboiled, begin to place potato slices into a baking dish. Once you have your first layer, season each layer with black pepper, pink himalayan salt add, chopped garlic, chopped onions, fresh parsley, baby spinach and grated Parmegto cheese.
Repeat with each layer until you’re out of potatoes then Grate cheese over the top.
Place the marinated sea bass on to the top of the potatoes and place into the oven for 25 minutes and until brown.
