Impress your friends and family by learning how to make this easy and delicious Coconut Mango King Prawn dish from scratch.

Ingredients
1 pack or or 170g Raw King Prawns Fresh Coriander, chopped
Fresh Parsley, chopped 1/2 inch Fresh Ginger, grated 1 Garlic Cloves, chopped
1-3 Green and Red Chilli’s, chopped
1/2 Ripe Mango, diced chunks
1/2 cup Tinned Coconut Milk 1/2 tsp Cumin Powder
2 tbsp Curry Powder
1 tsp Fish Sauce
1 tsp Turmeric
1 tbsp Sesame Seed Oil Sea Salt & Garlic Pepper to taste
What you need:
Sauce Pan
Frying Pan or Skillet
Pestle and Mortar
Food Processor
Chopping Board
Sharp Knives
Spatula
Mixing bowl
Method
Pour prawns into a bowl, rinse thoroughly and set aside.
Start by adding all your spices, chopped garlic & chilli’s into the pestle and mortar.
Add the sesame seed oil and grind everything together till you have a thick curry
paste.
Once you have a well mixed paste, add all of it into the bowl of prawns and mix together until all the prawns are covered and set aside.
To make your coconut and mango puree. Add the diced mango, coconut milk, pinch of salt and garlic pepper, fish sauce and grated ginger. Blend until smooth.
Fry the prawns in a frying pan or skillet till cooked through 6-8 minutes. Pour in your smooth puree into the skillet.
Add fresh coriander and parsley, mix in and simmer for 15 – 20 min on a medium heat.
Serve with brown rice for a healthier meal (this recipe was shot a while back)
